Our bison petite tender filet comes from the blade of the chuck or shoulder. Shape and size comparable to a pork tenderloin, this cut performs well sliced into medallions or cooked whole. Cut from one of the most tender muscles on the bison, our Petite Tenders are "white tablecloth quality”. Being a similar quality to filet mignon--but less expensive--this tiny little secret is one you have to try. Cook it the same way you would our filet mignon and you may never know the difference.
