For storing bison meat for a short period, refrigeration is ideal. Ensure your fridge is set to below 40°F (4°C) to keep the meat fresh for up to 3–5 days.
When refrigerating bison meat, store it in its original packaging or within an airtight container. This practice prevents any cross-contamination with other foods and maintains the meat’s natural flavor.
Bison meat is quite lean, which means it’s more susceptible to drying out than other meats. That makes it crucial to monitor the freshness of bison meat closely, and be sure to use it within this short time frame for optimal taste and texture.
