For many, beef brisket is a barbecue staple; however, it can be fatty and lack flavor, especially if you don’t cook it right. Bison brisket, on the other hand, is much leaner, more flavorful, and can be cooked in half the time!
Brisket comes from the breast and front shoulder area of the bison. Because this muscle is constantly moving as the bison walks, runs, and grazes, it is slightly tougher than other cuts that don’t get as much exercise, such as a ribeye. However, when cooked properly, bison brisket can be deliciously tender. The secret? Slow and steady wins the race. Let it cook slowly in a crockpot, Dutch oven, or your smoker and adjust your time based on your preferred level of tenderness.
Bison brisket can be difficult to cook if you’re not accustomed to it. That’s why it’s important to follow a recipe that will ensure you maximize the meat’s natural flavors.

Set your slow cooker to 425 degrees Fahrenheit or the high setting. Place the bacon in the slow cooker and cook until its translucent and grease forms. When the bacon is fully cooked, push it to the side of the slow cooker – if any is under the brisket, it won’t sear properly. If you don’t have enough room, remove the bacon and put it back in after the brisket sears. You can also sear the brisket in a frying pan with bacon fat or lard, then transfer it to the slow cooker.
Season both sides of the brisket with salt and pepper. Place the brisket in the slow cooker and sear on both sides. Then, reduce the heat to 275 degrees Fahrenheit or the low setting. Cook the brisket on low for nine to 10 hours or until the meat is tender. Serve the meat in shallow bowls and garnish with fresh parsley.
Need ideas for side dishes to go with your bison brisket? Mashed or baked potatoes are always a great choice. You can also roast red potatoes in the oven with various spices. Cut them into two-inch pieces and drizzle them with a little oil to help the seasonings stick. A mixture of salt, pepper, onion powder, garlic powder, and rosemary will give them a delicious flavor that compliments the brisket. Then, add your favorite vegetables like corn on the cob or a mix of roasted carrots, cauliflower, broccoli, and yellow squash for a healthy, hearty meal that’s perfect for any occasion!
