Bison meat is known for its lean, rich flavor, making it an excellent choice for stews. Below is a hearty bison stew recipe that you can try. This recipe takes into consideration the lean nature of bison meat, as well as some gourmet touches that make it stand out.
Preparation: Start by cutting all your vegetables and measuring your ingredients. It's easier to have everything ready before you start cooking.
Brown the Bison: In a large Dutch oven, heat the olive oil over medium-high heat. Brown the bison meat in batches to avoid overcrowding the pot. Remove the browned meat and set it aside.
Cook Vegetables: In the same pot, sauté the onions and garlic until translucent. Add carrots and celery and cook for another 5 minutes.
Deglaze: Pour in a small amount of the red wine to deglaze the pot, scraping up any browned bits from the bottom.
Add Ingredients: Add the browned bison meat back into the pot along with the potatoes and mushrooms.
Liquids and Seasonings: Add the remaining red wine, beef or bison bone broth, diced tomatoes, tomato paste, and Worcestershire sauce. Stir in salt, pepper, paprika, thyme, rosemary, and bay leaves.
Simmer: Cover the pot and let it simmer on low heat for about 2-3 hours. This long cooking time will help tenderize the bison meat and meld the flavors.
Check and Adjust: Taste the stew and adjust the seasonings if necessary.
Garnish and Serve: Remove bay leaves, garnish with fresh parsley if using, and serve hot.
