We often get asked how to cook bison sausage. Well, it's pretty easy. Just follow the steps below to cook your sausage perfectly. It's a foolproof technique that one of our farmers' market customers shared with us, and we've used it ever since.

How do you cook an amazing bison sausage? Well, that's easy.

  • Let the meat thaw at room temperature. Submerge it in room temperature water to accelerate the process.
  • Add the thawed sausages to a sauce pan and cover with cold water.
  • Heat on high until the water starts to simmer.
  • Remove the sausages and add to a fry pan on medium heat.
  • Brown all sides of the sausage in the fry pan.
  • Remove from heat and let these flavor-packed bison sausages rest for a couple of minutes.

How to Cook Bison Brisket (and Our Slow-Cooked Bison Recipe)

Tips for Cooking Brisket

For many, beef brisket is a barbecue staple; however, it can be fatty and lack flavor, especially if you don’t cook it right. Bison brisket, on the other hand, is much leaner, more flavorful, and can be cooked in half the time!

Brisket comes from the breast and front shoulder area of the bison. Because this muscle is constantly moving as the bison walks, runs, and grazes, it is slightly tougher than other cuts that don’t get as much exercise, such as a ribeye. However, when cooked properly, bison brisket can be deliciously tender. The secret? Slow and steady wins the race. Let it cook slowly in a crockpot, Dutch oven, or your smoker and adjust your time based on your preferred level of tenderness.

Slow-Cooked Bison Brisket Recipe

Bison brisket can be difficult to cook if you’re not accustomed to it. That’s why it’s important to follow a recipe that will ensure you maximize the meat’s natural flavors. 

Check out the recipe below for a classic bison brisket that’s sure to please everyone at your table:

Ingredients

  • 3 lbs bison brisket
  • 12 oz slab bacon
  • 1 cup bison broth (made with bison marrow bones)
  • 2 tbsp Worcestershire sauce
  • 2 tbsp tomato paste
  • 2 tbsp honey
  • Two large leeks, sliced thin
  • 2 pints of grape tomatoes
  • Three cloves of garlic, grated
  • One bay leaf
  • 2 tbsp fresh thyme, chopped
  • Parsley for garnishing

Instructions

Set your slow cooker to 425 degrees Fahrenheit or the high setting. Place the bacon in the slow cooker and cook until its translucent and grease forms. When the bacon is fully cooked, push it to the side of the slow cooker – if any is under the brisket, it won’t sear properly. If you don’t have enough room, remove the bacon and put it back in after the brisket sears. You can also sear the brisket in a frying pan with bacon fat or lard, then transfer it to the slow cooker.

Season both sides of the brisket with salt and pepper. Place the brisket in the slow cooker and sear on both sides. Then, reduce the heat to 275 degrees Fahrenheit or the low setting. Cook the brisket on low for nine to 10 hours or until the meat is tender. Serve the meat in shallow bowls and garnish with fresh parsley.

Need ideas for side dishes to go with your bison brisket? Mashed or baked potatoes are always a great choice. You can also roast red potatoes in the oven with various spices. Cut them into two-inch pieces and drizzle them with a little oil to help the seasonings stick. A mixture of salt, pepper, onion powder, garlic powder, and rosemary will give them a delicious flavor that compliments the brisket. Then, add your favorite vegetables like corn on the cob or a mix of roasted carrots, cauliflower, broccoli, and yellow squash for a healthy, hearty meal that’s perfect for any occasion!

Our Oven Roasted Meatball Recipe

Ingredients

  • 1 lb ground bison meat
  • One egg, beaten
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp Italian seasoning
  • 1/3 cup finely chopped onion
  • Two cloves garlic, minced

Directions

  1. Preheat your oven to 400 degrees.
  2. Combine all of the ingredients in a medium-sized bowl. Mix until well-blended.
  3. Form the meat into approximately 12 meatballs.
  4. Coat a baking sheet with non-stick cooking spray.
  5. Put the meatballs on a pan and bake in the oven for 10 minutes or until the meatballs are sizzling.

Seasoning Variations

Serve meatballs on an open face sub sandwich (if possible, toast the bread before serving), topped with tangy marinara sauce and melted mozzarella. Serve with chips, coleslaw, or a salad.

Bison Italian Meatball Soup

Cook the meatballs as described. While they’re roasting, make an Italian soup with chopped vegetables, tomato sauce, chicken broth, Italian seasoning, and the pasta of your choice. Simmer the soup until the vegetables soften. Toward the end of the simmering process, put the meatballs in the pot. Serve with parsley and shredded parmesan sprinkled on top.

Bison Swedish Meatballs

While your meatballs are roasting, prepare a side of mashed potatoes. We recommend combining your mashed potatoes with butter, salt, milk, and sour cream. Make your favorite gravy recipe (or gravy from a packet if you're short on time) and voilà! Serve your meatballs on top of the mashed potatoes, then drizzle with gravy.

Meatballs in Barbecue Sauce

This is a delicious (and simple!) side dish that you can serve when friends come over to grill. All you have to do is cook your meatballs as described, then baste with barbecue sauce for added flavor. Serve with potato salad, french fries, and burgers or brats.

Bison Burger Recipe #1: On the Grill

There’s nothing like grilling bison burgers, especially on warm spring or summer days. To make this recipe, start by preheating your grill to medium-high heat. This is especially important if you prefer charcoal grills, which require time to reach the ideal temperature. While you're preheating the barbecue, gather the following ingredients:

Ingredients

  • Ground bison
  • Garlic powder
  • Onion powder
  • Freshly ground pepper
  • Coarse sea salt
  • Olive oil
  • Barbecue sauce of your choice

Process

  1. Preheat your grill to medium-high heat.
  2. Combine ground bison, garlic powder, onion powder, pepper, and sea salt. The exact measurements of each spice are entirely up to you, so play with your combinations until you find what you like! A quarter- or half-teaspoon of onion powder and garlic powder per burger should be adequate, but again, you decide.
  3. Mash the meat and seasonings into a ball, then flatten it to create a patty.
  4. Baste the burgers with olive oil, and place them on the grill. Leave the patties on the open flame for six to seven minutes, then flip.
  5. After the first flip, baste the burger with barbecue sauce and cook for another six to seven minutes. This will create a medium-well to well-done burger.
  6. Flip the burger one more time, baste it with barbecue sauce on the other side, and then transfer it to the top rack. Put the cheese of your choice (we like pepper jack, but it's up to you) on the patty and allow it to melt in place before serving on a sourdough bun. Voilà.

If you’re in a pinch, you can also use pre-made bison burger patties. Simply sprinkle seasonings on top, throw them on the grill, and follow the instructions as usual.

Bison Burger Recipe #2: On the Stove

Prefer to make your burgers indoors? Cooking bison burgers on the stove is great, too! Try this recipe on a cold winter night or when you don’t want to be too far from the TV during the big game.

Burger Ingredients

  • Ground bison
  • Kosher salt
  • Half of a shallot, finely chopped
  • Worcestershire sauce
  • Two cloves of minced garlic
  • Freshly ground black pepper
  • Ground mustard
  • Coriander
  • Two tablespoons of butter

Sauce Ingredients

  • One tablespoon of dijon mustard
  • Half a cup of mayonnaise
  • Dried oregano

Process

  1. Combine the bison meat, salt, pepper, Worcestershire sauce, garlic, coriander, shallots, and ground mustard in a bowl. Again, the exact measurements of the spices are up to you and your flavor preferences. Mix the ingredients and form patties.
  2. Turn on the skillet to medium heat and allow it to warm up.
  3. Melt the butter on the skillet.
  4. Transfer the patties to the skillet and cook for three minutes on each side. While the burgers are cooking, mix the sauce ingredients.
  5. Put cheese of your choice on the bison patties, place a lid on the skillet, and allow the cheese to melt.
  6. Serve on a toasted sourdough bun with sauce on each side. This burger is delicious with caramelized onions and lettuce, too!
