Buying Guide
Portions, shipping, thawing, and freezer time are the four questions we get most, answered in plain numbers.

Bison is not a one-to-one swap for beef at the checkout. It is leaner, it is portioned differently, and it arrives at your door cold and ready to eat or put in the freezer. None of that is complicated; it just means the math you use for a grocery store pack does not transfer. Here is the math that does.
1 Portions
For steaks, plan on 8 oz per adult for a main course and 6 oz if there is a second protein or a heavy side. A ribeye or strip in that range feeds one person well. For ground bison, a third of a pound per burger is the sweet spot -- a one-pound pack makes three real burgers, not four thin ones. Bison is denser and eats richer than beef, so people tend to finish satisfied on slightly less than they expect.
Cooking for a crowd off a large cut? Brisket and roasts lose weight in the oven. Start from 3/4 lb of raw weight per person for bone-in and 1/2 lb for boneless, then round up. Leftover bison is a feature.
2 First order
If you have never cooked bison, do not open with a brisket. Order two pounds of ground and a pair of steaks. The ground teaches you the flavor in a format you already know how to cook. The steaks teach you the timing, which is the one real adjustment: less fat means faster heat transfer, so pull them two to three minutes earlier than you would a comparable beef cut, and rest them the same. Medium-rare is the ceiling, not the starting point.
Once that lands, the bigger cuts make sense. Brisket, short ribs, and roasts all want low and slow, and they reward the patience the same way beef does.
3 Storage
Vacuum-sealed and held at 0°F, steaks and roasts keep their quality for about a year and ground bison for six to nine months. Past that it is still safe indefinitely at that temperature, but the texture starts to slide, so rotate the freezer the way you would a pantry.
Thawing is the step most people rush. Move steaks to the fridge 24 hours ahead, ground bison 24 hours, and anything over four pounds a full 48. If you are short on time, leave the pack sealed and submerge it in cold water, changing the water every 30 minutes, then cook it the same day. Do not thaw on the counter and do not thaw in warm water--both cost you juice and neither saves much time. Once thawed in the fridge, cook within two to three days, and refreeze only if it never left refrigerator temperature.
