Who doesn’t like a delicious steak fresh off the grill? While Angus and other beef steaks are tasty, they’re not always the healthiest choice. Luckily, there’s an option that tastes good and is good for you: bison steak.
Cooking bison steak is quite similar to making beef steak. Plus, bison is completely versatile – you can grill it, fry it, or pan-sear it. When prepping your steak, you can go for something simple and only add salt and pepper to taste. Or, you can try something new to really amp up the flavor. Here are our favorite recipes to test out in your kitchen:
Combine the ingredients, then coat both sides of the steaks with the mixture. Heat your pan or grill to medium-high, then cook the steak according to the guidelines below:
Season the filets with salt and pepper. If you prefer more flavor, you can also add garlic powder and a little rosemary. Or, get creative and cook your steaks in a red wine reduction, but be sure to braise them first.
Cook the bacon and wrap it around the edges of the steaks. Use toothpicks to hold it in place.
As with ribeyes, you can cook filet mignon on the grill or in a frying pan. If you have a whole filet, you can also wrap it in bacon and bake it in the oven.
Be careful not to overcook the steak; this cut should be served rare or medium-rare for the best flavor results. Cooking times will vary depending on the thickness of the filet. Use medium heat instead of medium-high heat, unless you prefer blue rare.
Mix the first eight ingredients thoroughly. Then, rub the mixture on your steak. To cook, heat bacon grease or olive oil in a frying pan. Add the green bell pepper, red bell pepper, jalapeno pepper, and onion. Cook the peppers until they appear translucent.
Next, add the red wine and bring the mixture to a boil. Allow the wine to reduce by about one-third. Finally, add the steaks and cook until they are to your liking. You need just a few minutes on each side for blue rare and up to 10 minutes for well done.
Preheat your oven to 350 degrees Fahrenheit. Then, combine the first four ingredients in a bowl and set aside. Rub the salt and pepper over the bison petite tender.
Add the bacon grease or olive oil to a heavy-duty, oven-proof skillet and cook over medium-high heat. We prefer to use a cast-iron skillet for this recipe. Once the grease or oil is hot, add the bison meat and cook, frequently turning, until all sides are browned.
After the bison is done, brush it with Dijon mustard. Then, coat it with the spice mixture, pressing it into the roast. Finally, place the pan with the roast in the oven and bake for 15 to 20 minutes.
