Our meaty bison shanks--sometimes referred to as soup bones, Osso Bucco, or shanks--are the perfect foundation for a great Osso Buco recipe. The intense flavor you get from bison meat pairs perfectly with a good sauce or gravy. When slow cooked, this bison meat will fall right off the bone.
