When the leaves turn and the wind picks up, there's one dinner that wins every Sunday: a pot roast so tender it falls apart when you look at it. Make it with bison and you get deeper, richer, slightly sweet red-meat flavor in every bite. This is our Dutch oven bison pot roast, built around a well-marbled Buck Wild Bison chuck roast, a hard sear, and a long, slow braise that does the heavy lifting while you watch the game.
Prep time: 25 minutes
Cook time: 3 to 3.5 hours
Servings: 6
Bison is a lean red meat, which is why a steak goes from perfect to overdone fast. Chuck is the exception that makes the rule. It comes from the hard-working shoulder, so it carries connective tissue and marbling that need time and moisture to break down. Rush it and it's chewy. Braise it low and slow and that same connective tissue melts into a silky, beefy gravy. If you want the full rundown on which cut fits which meal, check out our guide Bison Cuts Explained: The Right Cut for Every Fall Meal.
If you've cooked our steaks, you know we preach pulling bison early: 125 to 135°F for medium-rare on steaks and tender roasts like tri-tip or prime rib. A braised chuck roast plays by different rules. It's cooked in liquid until the collagen melts, so you're aiming for fork-tender, which lands well past medium-rare. Same animal, different mission.
Any roast that survives dinner turns into a second meal that might be better than the first. Shred it into hot sandwiches with melted provolone and a cup of gravy for dipping, fold it into a breakfast hash with crispy potatoes and a fried egg, or stir it into a pot of chili. If you need a chili blueprint, our Game-Day Bison Chili is built for exactly this kind of cold-weather cooking.
Fall and winter are pot roast season, and one chuck roast never seems to be enough. Grab a Buck Wild Bison chuck roast in the size that fits your crew, add a jar of bison cooking tallow for a better sear, or load the freezer with the Bison Meat Slow Cooker Bundle, two chucks and a brisket built for low-and-slow cooking all season long. Light the oven, pour something good, and let the bison do the talking.

Elk runs about 5% fat. Beef runs 20%. That difference is why most people ruin their first elk burger — and why the fix takes six steps and under ten minutes.
