Cut from the rib area, bison short ribs are considered meatier than other ribs. The ribs are cut flanken style, which is cut across the bone and leaves a 1-2" bone overlaid by delicious bison meat. Our bison short ribs fall off the bone when cooked low and slow. Braise them with your favorite sauce, and you'll be in for a delicious treat.
