Skirt Steak

Cut from the short plate of our bison, the bison skirt steak is prized for its flavor. Very similar to flank steak, this cut needs to be sliced thinly across the grain to maximize tenderness. The intense bison flavor in our Skirt Steak make it great for fajitas and stir fry.  For the best dining experience, grill or pan sear quickly or cook very slowly, typically braised.
