Cut from the brisket, chuck, or rib areas, bison short ribs are considered meatier than other ribs. The ribs are cut flanken style, which is cut across the bone and leaves a 1-2" bone overlaid by delicious bison meat. Our bison short ribs fall off the bone when cooked low and slow. Braise them with your favorite sauce, and you'll be in for a delicious treat.
